This Monday, June 6th, I will be co-hosting a sake paring dinner at Roka Mayfair with the world-renowned Dassai Sake Brewery, presenting a sake pairing menu designed by ROKA’s Executive Head Chef Hamish Brown. Vice President of the Asahi Shuzo will be joining us.

There is few sake that exclusively provided for this evening.

setsuban 2016

Setsubun is the day before beginning of the spring on the ancient calendar in Japan. It means “division of season” but this is usually refers to the Spring. This Setsubun was influenced from China in 8th Century.
We thrown roasted soy beans either out the door or at a member of the family wearing an Oni(demon) mask, and we say “Demons out, Luck in!” Then after that, we eat roasted soybeans as one for each year of one’s life.

To introduce the tradition of setsubun,  Oliver from Tengu sake, and myself will be hosting the Sake+Dinner event at the Shackfuyu in Soho.

Japanese Sake Supper Club: Discovering Sake and Paring with a delicious course French meal!

Sure, we’ve all enjoyed the classic Japanese cuisine with Sake, but does non-Japanese cuisine pair well with a wide variety of fine sake? The answer is an emphatic YES!

Join Sake Educator Satomi Dosseur of Enshu Limited and Andrew Clements from Jenius Social for a fun and delicious evening of French cuisine paired with a variety of fine Japanese sake.

Satomi will share her vast knowledge of sake, including how sake is made, the different varieties of sake and how to taste this fine beverage. This will be an educational fun and very tasty evening with one of the best sake sommelier in London. Join us for this unforgettable evening!

The menu for the evening includes:

Starters

• Asparagus Spears, Poached Egg, Hollandaise Sauce and Chervil OR

• Confit Tomato Salad with Balsamic Jellies and Sauce Vierge

Mains

• Classic Beef Bourguignon, Bacon Lardons, Pearl Onions, Chestnut Mushrooms served with a Creamy Mash OR

• Cheese Soufflé with Baby Gem, Chives and Parsley Salad with Garlic Mayonnaise

Desserts

• Strawberry Mille Feuille with Strawberry Ice cream OR

Sake at the Restaurant Show!!!

This time of the year has come!

I am sure many of you are looking forward to visit Restaurant show as much as me.

World Sake Day 2015 Sake masterclass and party

1st October is World Sake Day and Tengu Sake is running an ‘Introduction to Sake’ Masterclass at 6:30pm which then rolls into a sake party come 8pm. This is a great way to discover a bit about sake and taste a variety of sakes over the course of the evening.
